Roasted Vegetables with Paprika (Legumes assados com páprica)

Ingredients

1/2 cauliflower (2 1/2 cups, cut into medium florets)
8 radishes
2 carrots
3 tablespoons olive oil
1 1/2 teaspoons paprika
salt and freshly ground black pepper to taste

Preparation method

  1. Preheat the oven to 220 °C
  2. Wash the cauliflower florets in a bowl of water
  3. Lift the florets out of the water with your hands so the dirt stays at the bottom of the bowl
  4. Drain well in a colander
  5. Thoroughly clean the radish skins with a brush under running water
  6. Pat the radishes dry and cut them in half or into quarters if they are large
  7. Peel the carrots and cut them in half crosswise
  8. Cut the thinner part of the carrot into four lengthwise strips
  9. Cut the thicker part of the carrot into six lengthwise strips
  10. Spread all the vegetables on a large baking tray
  11. Drizzle the vegetables with the olive oil
  12. Sprinkle with the paprika, salt, and black pepper
  13. Mix everything very well to make sure each piece is coated with seasoning and oil
  14. Spread the vegetables out on the baking tray, leaving space between them so they roast evenly and turn nicely golden
  15. Bake for about 30 minutes
  16. Turn the vegetables with a spatula halfway through so they brown on all sides
  17. Remove from the oven as soon as they are tender and golden
  18. Serve immediately
