Easy Traditional Roast Beef Ribs (Costela assada)

Ingredients

2 whole racks of beef ribs
6 cloves garlic, crushed
Juice of 1/2 lemon
Salt, to taste
Beef stock, optional

Where to find ingredients

Look for beef ribs in the meat section of supermarkets, wet markets, or neighborhood butchers. Garlic, lemon, and salt are easy to find in the produce and pantry aisles; beef stock cubes or liquid stock can be used as a substitute if needed.

Preparation method

  1. Season the racks of ribs with the crushed garlic, lemon juice, and salt
  2. Place the seasoned meat in a roasting pan
  3. Cover the pan tightly with foil
  4. Bake in a preheated oven at medium heat (about 180°C) for 3 hours
  5. Remove the foil
  6. Keep baking for longer, turning the meat occasionally and basting with the beef stock (if using) or the pan juices, until well browned
  7. If the liquid in the pan dries out, add a little boiling water to prevent sticking and create more sauce

Observations

Roast beef ribs are a comforting, flavourful dish, ideal for family gatherings and celebrations. This recipe uses whole racks of beef ribs, roasted until they become fall-apart tender, with a golden, appetising crust. Although it takes time, the method is surprisingly simple, relying on basic seasonings that bring out the meat’s natural flavour.
