Ingredients

500g cleaned tripe
500g dried cannellini beans
500g fresh pork spareribs
500g chicken thigh and leg quarters
200g bacon, diced
1 large onion, finely chopped
5 cloves garlic, minced
500g potatoes, peeled and cubed
500ml chicken stock
Fresh parsley, chopped to taste

Preparation method

  1. Boil the white beans in a large pot with water until tender.
  2. Drain the beans and set them aside.
  3. Boil the tripe in a separate pot of water for approximately 40 minutes.
  4. Drain the water from the tripe and set aside.
  5. In a large heavy-bottomed pot, fry the bacon until crisp and golden.
