100 g desiccated coconut
120 ml warm water
4 eggs
3 egg yolks
480 g sugar
30 g butter

4 eggs
3 egg yolks
480 g sugar
30 g butter
Where to find ingredients
You can find desiccated coconut, eggs, sugar, and butter at any major New Zealand supermarket such as Woolworths or Foodstuffs stores. Check the baking aisle for coconut and sugar.
Preparation method
- Mix the desiccated coconut with the warm water in a small bowl
- Let the coconut stand for about 5 minutes until it is well hydrated
- Place the hydrated coconut, eggs, egg yolks, sugar and butter in a blender and pulse just enough to combine
- Grease a 1.5-litre microwave-safe dish with butter and sprinkle with sugar, then pour the mixture in
- Microwave on medium power for 9 to 12 minutes until the quindão begins to set
- Remove from the microwave, let it cool slightly and carefully turn it out onto a serving plate
- Wait for it to cool completely before serving to ensure the perfect texture
Observations
The quindão is a popular, larger variation of the traditional Brazilian quindim. This simplified version uses the microwave to ensure quick results without sacrificing the signature coconut and egg flavour. Tip: use a microwave-safe dish to ensure even cooking.
