Where to find ingredients
You can find all fresh produce and pantry staples at your local supermarket (such as Countdown, New World, or Pak'nSave). Look for high-quality citrus in the produce section. If you cannot find breadcrumbs, you can easily make your own by blitzing dried bread in a food processor.
Preparation method
- Blend all the ingredients together in a blender until the batter is smooth and well combined.
- Grease a 36 x 24 cm baking tray with butter.
- Line the bottom and sides of the tray with baking paper.
- Brush the baking paper with butter and lightly dust with breadcrumbs.
- Preheat the oven to a low temperature.
- Pour the batter evenly into the prepared tray.
- Bake for 50 minutes or until the top is lightly golden.
- Spread a clean tea towel out on a flat surface.
- Dust the towel generously with sugar.
- Carefully turn the baking tray over onto the sugared towel to release the cake.
- Gently peel away the baking paper.
- Use the tea towel to help roll the cake tightly from the shorter side, creating the signature swiss roll shape.
- Carefully transfer the roll to a serving platter.
- Dust with icing sugar and garnish with the reserved strips of orange peel.
Observations
This straightforward and quick recipe yields a light, airy sponge cake that is easy to roll. It is the perfect accompaniment for a morning tea or to serve as a bright, citrus-forward dessert on any special occasion.
