Ingredients
300g standard flour
200g butter, softened
100g white sugar
1 egg yolk
2 tbsp red wine (divided)
6 tart red apples (approx. 1kg)
100g seedless sultanas
200g butter, softened
100g white sugar
1 egg yolk
2 tbsp red wine (divided)
6 tart red apples (approx. 1kg)
100g seedless sultanas
Where to find ingredients
Find your standard flour and butter at any local supermarket like Countdown, Pak'nSave or New World. For the apples, look for firm, tart varieties such as Granny Smith or Braeburn in the produce section. Sultanas are easily found in the baking aisle. For the red wine, any dry, drinkable red wine from the liquor department will work perfectly.
Preparation method
- Cream the butter and sugar together until the mixture is smooth and pale
- Beat in the egg yolk and one tablespoon of the red wine
- Gradually work in the flour until fully incorporated
- Knead the dough until it is consistent and uniform
- Note that this particular dough will have a slightly oily and sticky texture
- Divide the dough into two portions, one being two-thirds of the total and the other one-third
- Wrap both portions and leave them to rest in the fridge for 30 minutes
- Peel the apples and slice them into medium-sized wedges
- In a bowl, toss the apple slices with the remaining tablespoon of red wine and the sultanas
- Steam the apple mixture gently until the slices are tender
- Press the larger portion of the dough into the base and up the sides of a springform tin
- Spread the apple filling evenly over the prepared base
- Roll the remaining small portion of dough into thin strands
- Arrange the dough strands over the filling to create a decorative lattice pattern
- Bake in a preheated oven at a moderate temperature until the top is golden brown
