Classic Condensed Milk Pudding (Pudim de leite condensado)

Ingredients

3 eggs
1 tin condensed milk
1 tin milk (using the condensed milk tin as a measure)
3 tablespoons white sugar (for the caramel)

Where to find ingredients

You can find condensed milk in the baking aisle of any local supermarket, such as Countdown or New World. For best results, use standard NZ full-cream milk. If you cannot find a ring mould, a standard non-stick cake tin is a suitable substitute.

Preparation method

  1. Preheat your oven to 180°C for 10 minutes.
  2. In a blender, pulse the eggs, condensed milk, and milk for approximately 3 minutes until the mixture is smooth and well combined.
  3. Prepare the caramel directly in a ring mould by adding the sugar and heating over a low flame, stirring occasionally until it melts into a golden amber syrup.
  4. Carefully coat the bottom and inner sides of the mould with the prepared caramel.
  5. Pour the blended mixture into the caramelised mould.
  6. Place in the preheated oven and bake for about 40 minutes, or until the pudding is set and the top is lightly golden.
  7. Remove from the oven and allow it to cool down to room temperature before placing it in the fridge.
  8. Chill for at least 4 hours, though overnight is ideal to ensure the texture is perfectly firm.
  9. To unmould, run a thin knife around the edges and carefully invert the tin onto a serving plate.

Observations

Pudim de leite condensado is widely celebrated as the ultimate comfort dessert in Brazil, cherished for its elegant simplicity and unmistakable, rich flavour.

Renowned for its velvety texture and perfectly balanced sweetness, this custard is a staple for family gatherings and festive celebrations alike.

This method is wonderfully practical, skipping the traditional water bath (banho-maria) technique, making it an approachable way to prepare an authentic, mouth-watering homemade treat.
