Where to find ingredients
Buy the ingredients at supermarkets, open markets, and the chilled section for dairy and pastry items. Look for palmito in the tinned vegetables aisle or specialty produce section; if needed, use palm heart as the closest substitute.
Preparation method
- In a bowl, mix the all-purpose flour, mayonnaise, eggs and salt. Add the water a little at a time, if needed, until you have a smooth, workable dough
- In a pan, heat the olive oil and sauté the grated onion until golden
- Add the chopped peppers, chopped palm heart, chopped olives and chopped tomato
- Cook over medium heat for about 5 minutes, stirring occasionally
- In a small bowl, dissolve the cornflour in a little water or in the cream itself so it does not lump
- Add the cream and the dissolved cornflour to the pan with the filling. Cook for another 3 minutes, stirring constantly, until the sauce thickens
- Season with salt to taste and add the chopped fresh herbs
- Remove the filling from the heat and let it cool completely
- Line the bottom and sides of a pie dish with half of the dough
- Fill with the cooled palm heart filling
- Cover the pie with the remaining dough, sealing the edges well
- Brush the top with the beaten egg yolk
- Bake in a preheated 180°C oven for about 50 minutes, or until golden brown
