Where to find ingredients
Look for the chicken, dairy, flour, and breadcrumbs at the supermarket, with the stock cubes and seasonings in the seasoning aisle. You can also buy the cooked shredded chicken from the chilled foods counter or prep the chicken at home as needed.
Preparation method
- For the filling, heat the olive oil in a pan and sauté the chopped garlic and onion
- Add the shredded chicken and the seasonings, stirring-frying for about 5 minutes
- Remove from the heat, mix in the creamy requeijão, and set the filling aside
- In another large pan, combine the water, milk, stock cubes, mashed potato, and butter
- Bring to the heat and let it boil
- Add the wheat flour all at once, stirring vigorously until the dough pulls away from the bottom of the pan
- Transfer the dough to a smooth, lightly greased surface
- Knead the dough until smooth and let it cool slightly
- Flatten portions of the dough in your hands, add some of the filling, and shape into the classic coxinha form
- Dip each shaped coxinha first in the beaten eggs, then in the breadcrumbs
- Heat the oil in a deep pan and fry the coxinhas until evenly golden
- Remove the fried coxinhas and drain off the excess oil on paper towels
