Easy Creamy Carrot Cake (Bolo de cenoura)

Ingredients

1/2 cup oil
3 medium carrots, grated
4 eggs
2 cups sugar
2 1/2 cups wheat flour
1 tablespoon baking powder
1 tablespoon butter
3 tablespoons cocoa powder
1 cup sugar
1 cup milk

Where to find ingredients

In Nigeria, carrots are easy to find in markets and supermarkets, while flour, sugar, baking powder and cocoa powder are in baking sections or provision shops. Buy eggs, milk, butter and oil from supermarkets, neighbourhood stores or market stalls.

Preparation method

  1. In a blender, blend the carrots, eggs and oil until you get a smooth mixture
  2. Add 2 cups of sugar to the mixture and blend for another five minutes to make sure the batter is very smooth
  3. Pour the cream into a bowl
  4. Fold in the wheat flour little by little, stirring well
  5. Add the baking powder and mix gently with a spoon so the cake rises evenly
  6. Pour the batter into a greased and floured pan
  7. Bake in a preheated oven at 180°C for about 40 minutes, or until a toothpick comes out clean
  8. As the cake bakes, prepare the topping in a saucepan
  9. Add the butter, cocoa powder, 1 cup of sugar and the milk
  10. Place over medium heat, stirring constantly, until it becomes creamy
  11. Take the cake out of the oven and pour the hot topping over it while it is still warm
  12. Allow it to cool slightly before serving

Observations

This carrot cake is loved all over Brazil for its fluffy texture and bright colour. Because the batter is made in a blender, it is practical enough for regular home baking and still special enough for guests. The creamy chocolate topping rounds off the sweetness and soft crumb, making it a very satisfying dessert.

It is the kind of quick, comforting cake to make when you want something sweet with a childhood feel. Serve it with fresh coffee or tea and enjoy it warm or cooled.
