Creamy Coconut Milk Fish Stew (Peixe ao leite de coco)

Ingredients

1 kg cação (firm-fleshed shark), cut into steaks
1/2 cup olive oil or vegetable oil
Salt, black pepper, fresh coriander, and spring onions to taste
800 ml coconut milk (2 bottles of approx. 400 ml each)
2 ripe tomatoes, peeled, seeded, and chopped
1 tablespoon cornstarch, dissolved in a little water
4 cloves garlic, minced or crushed
1 lime, juiced for seasoning

Where to find ingredients

You can find fresh fish at local open-air markets or fishmongers. Canned coconut milk, cornstarch, and fresh produce such as tomatoes, coriander, and limes are readily available at any neighborhood supermarket or corner grocery shop.

Preparation method

  1. Season the fish with lime juice, garlic, salt, and black pepper.
  2. Let it marinate in the refrigerator for 1 hour.
  3. Heat the oil in a large pan and sauté the tomatoes until they soften.
  4. Pour the coconut milk into the pan and bring to a gentle heat.
  5. Add the fish to the pan and cook for about 15 minutes, until tender and coated in the sauce.
  6. Taste and adjust the seasoning with salt and pepper as needed.
  7. Towards the end of the cooking process, stir in the coriander, spring onions, and the dissolved cornstarch.
  8. Mix well to combine.
  9. Allow the sauce to thicken for a few minutes, then remove from heat.

Observations

Fish in coconut milk is a traditional staple that perfectly balances the delicate texture of the fish with the richness of coconut milk. This dish is highly regarded for its ease of preparation and bold profile, making it a fantastic choice for those seeking a comforting meal. Using fresh ingredients and a straightforward simmering technique, the result is a beautifully creamy sauce that pairs wonderfully with steamed white rice or light side dishes.
