Ingredients
4 cups grated cassava
3 cups sugar
200 g margarine
1 small packet grated parmesan cheese
4 eggs
1 pinch of salt
3 cups sugar
200 g margarine
1 small packet grated parmesan cheese
4 eggs
1 pinch of salt
Where to find ingredients
In Nigeria, cassava, eggs, sugar, margarine and salt are widely available in open markets, grocery shops and supermarkets. Parmesan is more common in larger supermarkets or cheese sections. Parmesan is ideal; if unavailable, use a firm grated salty cheese as a substitute.
Preparation method
- Start by beating the margarine, sugar and egg yolks until you get a smooth cream
- Add the grated cassava, parmesan cheese and pinch of salt, mixing everything very well
- Beat the egg whites separately until stiff, then fold them gently into the batter to make the cake lighter
- Pour the mixture into a greased baking tin
- Bake for about 45 minutes or until golden and firm
Observations
This recipe is a good match for a fresh cup of tea or coffee. Its balance comes from creamy grated cassava and the small salty note of parmesan, making a simple sweet cake with plenty of character.
