Ingredients
1 can sweetened condensed milk
1 jar peanut cream
1 package (200 g) cornstarch cookies
1 tablespoon margarine
1 jar peanut cream
1 package (200 g) cornstarch cookies
1 tablespoon margarine
Where to find ingredients
Look for these ingredients in the baking aisle, the spreads section, and the cookie aisle of most supermarkets in Namibia. If needed, use a peanut butter substitute for the peanut cream, but keep the texture as close as possible.
Preparation method
- Crush the cornstarch cookies in a blender until you get a fine crumb.
- In a stand mixer, add the sweetened condensed milk and the margarine. Beat until you have a smooth mixture.
- Gradually add the peanut cream to the mixer mixture and keep beating.
- Remove the dough from the mixer and transfer it to a bowl.
- Add the cookie crumbs little by little to the dough. Mix and knead with your hands until all the ingredients are well combined and the dough is moldable.
- Transfer the dough to a baking dish or Pyrex.
- Refrigerate and let it chill overnight, or for at least 8 hours, so it firms up well.
- Cut the paçoquinha into small squares before serving.
