Tinned sweetened condensed milk is usually stocked in supermarkets, grocery shops and wholesalers, near baking ingredients, canned milk or dessert products. The original ingredient is sweetened condensed milk; caramel treat may be used only as a substitute.
Preparation method
- Remove the paper label from the tin of sweetened condensed milk
- With a small knife, remove any glue residue to prevent it from blocking the pressure cooker valve
- Place the tin of sweetened condensed milk inside the pressure cooker
- Add water to the cooker until the tin is covered, leaving about two fingers of water above it
- Close the pressure cooker and put it on medium heat
- When the cooker starts to whistle, lower the heat if necessary and cook for 20 minutes
- Switch off the heat and wait for the steam to release naturally. Do not force the steam out
- Once all the pressure has released, open the lid carefully
- Use tongs to remove the hot tin from the cooker, avoiding burns
- Let the tin cool completely for at least 2 hours before opening
- For best results, prepare the doce de leite the day before serving
