Creamy Carrot Soufflé (Souflé de cenoura cremoso)

Ingredients

250 g cooked and drained carrots
200 ml milk
2 large eggs
100 g grated Parmesan cheese
Grated Parmesan cheese for sprinkling (optional)
Butter or oil for greasing

Where to find ingredients

Fresh carrots, milk, eggs, and butter or vegetable oil can be purchased at fresh produce markets such as Lilongwe Central Market or Limbe Market, as well as in supermarkets like Shoprite and PTC across Malawi. Imported Parmesan cheese is typically found in the refrigerated dairy section of major supermarkets; a mature cheddar or local hard cheese can be used as a substitute if needed.

Preparation method

  1. In the blender jug, add the cooked carrots, milk, eggs, and half of the grated cheese.
  2. Blend all the ingredients well until you achieve a smooth and homogeneous mixture.
  3. Grease a baking dish with butter or oil and sprinkle with grated Parmesan cheese, if desired.
  4. Pour the blender mixture into the prepared baking dish.
  5. Sprinkle the remaining grated cheese on top, if using.
  6. Place in a preheated oven at 180°C for approximately 20 to 30 minutes, or until the soufflé is golden and firm.

Observations

This carrot soufflé is a versatile and flavoursome option in Brazilian home cooking. Its light, airy texture, combined with the gentle sweetness of cooked carrots and the savoury note of cheese, makes it a favourite at any table. It is ideal for anyone looking for a quick and nutritious recipe that works beautifully as a starter, a side dish, or a light snack.

The preparation is remarkably straightforward using basic pantry staples, and the result is a delicate, satisfying dish that appeals to every palate.
