Ingredients
12 ears of fresh corn with husks
1 cup water
2 cups sugar
1 cup finely grated coconut
1 pinch salt
1 cup water
2 cups sugar
1 cup finely grated coconut
1 pinch salt
Where to find ingredients
Fresh corn on the cob is widely available in supermarkets and farmers' markets during its season. Look for ears with green, tightly wrapped husks. Grated coconut can be found in the baking aisle of most supermarkets. If fresh coconut is unavailable, desiccated or frozen grated coconut can be used, though fresh is preferred for texture. Sugar and salt are standard pantry staples found in any grocery store.
Preparation method
- Remove the kernels from the ears by grating or cutting close to the cob
- Blend the kernels in a blender with the water
- Add the grated coconut, sugar, and salt to the mixture
- Mix everything very well
- Prepare small portions of the dough using the corn husks
- Fold and tie the husks firmly so the content does not leak
- Heat a large pot with water until it is at a rolling boil
- Dip the pamonhas one by one into the boiling water
- Maintain a constant boil to ensure the dough cooks properly without falling apart
- Let them cook for approximately 40 minutes
- Remove the units from the water using a slotted spoon
- Place them in a cool place to cool before serving
- Serve with coffee and grated cheese to taste
Observations
This recipe uses the whole green corn, utilizing the husks to shape and cook the dough, ensuring the characteristic texture and aroma of this delicacy.
