Where to find ingredients
Find standard baking supplies at major supermarkets in Nairobi or Mombasa. For the 'Queijo Minas' and 'Goiabada', check specialist international food stores or high-end delicatessens. If unavailable, high-quality paneer or a very mild fresh white cheese can act as a substitute for Queijo Minas, though the original product provides the signature flavour.
Preparation method
- Preheat the oven to 180°C.
- Grease your individual moulds with butter and dust them with flour, then set aside.
- In a mixing bowl, whisk the eggs and sugar together until the mixture is smooth.
- Incorporate the grated Queijo Minas into the egg mixture and stir well.
- Add the cream cheese and melted butter, mixing until the batter is consistent.
- Gently fold in the all-purpose flour until the batter is smooth and well-combined.
- Fill the prepared moulds slightly more than halfway with the batter.
- Press a cube of goiabada into the centre of each portion of batter.
- Cover with the remaining batter, ensuring you do not fill above the rim of the moulds.
- Bake in the preheated oven for approximately 5 minutes, until the edges are set while the centre remains soft and molten.
- Carefully remove from the oven, unmould while still warm, and serve immediately.
- Optionally, serve with a side of guava or passion fruit coulis.
