Where to find ingredients
You can find fresh prawns and local herbs at your nearest neighborhood market or fishmonger. The requeijão cremoso is a unique Brazilian creamy cheese spread; if unavailable, a high-quality cream cheese or labneh may be used as a substitute. Look for annatto (colorau) in the spice section of larger supermarkets.
Preparation method
- Thoroughly wash the prawns and marinate in lime juice and salt for about 20 minutes.
- Rinse the prawns again and drain well.
- In a large heavy-bottomed pot, sauté the crushed garlic in the olive oil until golden.
- Add the chopped onion, annatto powder, and chopped tomatoes.
- Cook over medium heat until the onions are soft and translucent.
- Stir in the tomato sauce, beef bouillon, and chopped basil.
- Add the butter and the prepared prawns to the pot.
- Simmer on low heat for approximately 30 minutes, stirring occasionally.
- Add the requeijão cremoso and continue cooking for 10 minutes, stirring until the sauce thickens.
- If the sauce needs more body, dissolve the cornstarch in a little of the warm broth from the pot, stir back in, and cook for another 3 minutes.
- Fold in the chopped coriander and spring onions.
- Remove from the heat and stir in the table cream.
- Mix gently until the sauce is uniform and velvety before serving.
