Where to find ingredients
You can find most ingredients at local supermarkets or open-air markets (soko). For the Brazilian requeijão cremoso and the specific type of pumpkin (moranga or a similar winter squash variety like kabocha), check specialized imported food shops or large-scale retail grocers in Nairobi. If unavailable, a thick cream cheese or a dense pumpkin variety can serve as a substitute.
Preparation method
- Sauté the garlic and onion
- Brown the garlic in margarine
- Add the grated onions and sauté until translucent
- Cook the shrimp
- Add the cleaned shrimp to the pan, season with salt, and fry for a few minutes until pink
- Set aside
- Flambé the shrimp
- Warm the brandy in a separate small saucepan
- Carefully ignite the brandy and flambé the shrimp
- Once the flames die out, add the curry, chopped tomatoes, coriander, and pimenta de cheiro

- Reduce the heat and stir in the table cream, mixing constantly
- Cook for a few minutes without letting it come to a boil
- Turn off the heat and let it rest
- Prepare the pumpkin
- Wash and dry the exterior of the pumpkin
- Using a sharp knife, cut a lid out of the top of the pumpkin
- With a spoon, scoop out the seeds and pulp, leaving a thin layer of flesh on the walls
- Wipe the inside with a damp cloth
- Grease and fill
- Spread the requeijão cremoso along the inside walls of the pumpkin
- Fill with the creamy shrimp mixture
- Replace the pumpkin lid and wrap the entire pumpkin in aluminum foil
- Roast the pumpkin
- Place in a roasting pan with a water bath and bake for about 1 hour, until the pumpkin flesh is tender when pierced with a fork
- If necessary, cover again and continue baking until the desired level of tenderness is achieved
