Where to find ingredients
Look for the ingredients in the fresh produce section, at the vegetable market, and in the spices aisle; if needed, use ripe local tomatoes as a substitute for Italian or plum tomatoes.
Preparation method
- Place the tomatoes in a saucepan and cook over heat until they soften
- Pass the cooked tomatoes through a vegetable mill or sieve to remove the skins and get a smooth purée
- In another pan, heat the olive oil
- Sauté the chopped onion and crushed garlic until lightly golden
- Add the processed tomato and the pinch of cumin to the pan
- Cook over low heat for 15 minutes
- Season with salt to taste
- Finish the recipe by adding the fresh basil before serving
