Potato and tuna bake (Torta de batata com atum)

Ingredients

4 large potatoes, boiled and mashed
2 eggs
1/2 tablespoon extra virgin olive oil (for the dough)
2 tablespoons olive oil (for the filling)
1 clove garlic, crushed
1 medium onion, chopped
2 tomatoes, peeled, seeded, and chopped
1/2 bell pepper, cut into thin strips
1 tin of shredded tuna
1 pinch of salt
1 pinch of black pepper
1 pinch of dried oregano
1/2 cup water

Where to find ingredients

You can find fresh produce like potatoes, onions, tomatoes, and bell peppers at local Gambian markets or community stalls. Canned tuna, olive oil, and basic spices are widely available at major supermarkets in the Banjul or Serrekunda areas. If needed, you can use any firm white fish as a substitute for tuna.

Preparation method

  1. In a bowl, combine the mashed potatoes, eggs, and 1/2 tablespoon of olive oil. Set aside.
  2. Heat 2 tablespoons of olive oil in a pan and sauté the crushed garlic.
  3. Add the chopped onion and sauté until translucent.
  4. Add the chopped tomatoes and pepper strips. Season with salt, black pepper, and oregano.
  5. Pour in 1/2 cup of water and cook for about 5 minutes, until the vegetables are tender.
  6. Incorporate the shredded tuna into the pan and cook for another 3 minutes, stirring well to ensure a consistent sauce.
  7. Pour the tuna sauce over the potato mixture in a baking dish.
  8. Bake in a preheated oven at 180°C for approximately 15 minutes, or until lightly golden.
  9. Serve the bake warm, accompanied by rice and, if desired, a glass of white wine.
