Digestive biscuits are common in the biscuit aisle of any local supermarket. Margarine is in the chilled dairy section. Pumpkin is widely available fresh; look for firm varieties in the produce section. Ricotta and cream cheese are standard in the dairy aisle. For the table cream, look for tinned cream in the baking or milk aisle of your grocery store. Gelatine sachets can be found in the baking or jelly section.
Preparation method
- Start by preheating your oven to 200°C
- Crush the biscuits until they are a fine, sandy crumb
- Combine the biscuit crumbs with the margarine and milk, mixing well until you have a moist and uniform dough
- Press this mixture evenly into the bottom and up the sides of a 25cm diameter pie tin
- Bake for 15 minutes, then leave it to cool completely before moving on
- Steam the pumpkin until it is very tender, then mash it thoroughly with a fork while it is still warm
- Whiz the ricotta, cream cheese, and sugar in a food processor or blender until the mixture is silky smooth
- Prepare the gelatine exactly according to the instructions on the packet
- In a mixing bowl, gently fold together the mashed pumpkin, table cream, the blended cheese mixture, and the prepared gelatine until smooth and well combined
- Spread the filling over your cooled crust and pop it in the fridge until the pie is firm and ready to be served
