Where to find ingredients
You can find fresh shrimp at local fish markets or specialized seafood sections in Banjul. Requeijão cremoso and annatto (colorau) are unique Brazilian ingredients; if unavailable, you may substitute the requeijão with a high-quality cream cheese mixed with a little heavy cream to achieve the correct texture, though the original product is recommended for the authentic taste.
Preparation method
- Clean the shrimp thoroughly and marinate in lime juice and salt for about 20 minutes.
- Rinse the shrimp once more and drain well.
- In a large heavy-bottomed pot, sauté the crushed garlic in the olive oil until fragrant.
- Stir in the chopped onion, annatto, and tomatoes.
- Cook until the onion becomes translucent and softened.
- Incorporate the tomato sauce, beef-flavored bouillon powder, and fresh chopped basil.
- Add the butter and the prepared shrimp into the pot.
- Simmer on low heat for approximately 30 minutes, stirring occasionally.
- Stir in the requeijão cremoso and continue to cook for about 10 minutes until the sauce thickens.
- If the sauce needs more body, dissolve the cornstarch in a small amount of the cooking liquid, return it to the pot, and cook for another 3 minutes.
- Fold in the fresh chopped cilantro and green onions.
- Remove from the heat and stir in the heavy cream.
- Mix gently until the sauce is smooth and homogeneous.
