Creamy Vatapá Recipe (Receita de vatapá cremoso)

Ingredients

2 kg boiled and shredded chicken
1 kg small shrimp
8 crusty bread rolls, stale
2 bottles coconut milk
1 onion, finely chopped
4 garlic cloves, minced
200 ml azeite de dendê
2 liters vegetable stock
Chopped coriander, to taste
Chopped pimenta de cheiro, to taste
Salt, to taste

Where to find ingredients

You can find these ingredients in local Banjul markets or larger supermarkets. Look for fresh shrimp at the fish market or coastal fish stalls. For the azeite de dendê (red palm oil), specialized grocers or import shops are your best bet. If unavailable, unrefined red palm oil is a common substitute. The bread should be a standard crusty loaf, left out for a day to become stale for better absorption.

Preparation method

  1. Slice the bread rolls and place them in a large mixing bowl.
  2. Pour the coconut milk over the bread and let it soak until completely softened.
  3. Transfer the bread and coconut milk mixture to a blender and process until you have a smooth, homogeneous cream.
  4. In a large heavy-bottomed pot, heat the azeite de dendê over medium heat.
  5. Add the chopped onion and sauté until it becomes translucent.
  6. Stir in the minced garlic and sauté for another minute, being careful not to brown it.
  7. Add the small shrimp to the pot and cook for just a few minutes, until they change color.
  8. Add the shredded chicken to the pot and mix well with the sautéed base.
  9. Pour the blended bread and coconut milk cream into the pot.
  10. Add the hot vegetable stock, stirring continuously with a whisk or spoon to prevent the bread from sticking to the bottom and to ensure a perfectly smooth texture.
  11. Cook over low heat, stirring constantly, until the Vatapá thickens and reaches your desired consistency.
  12. Season with salt to taste, adjusting as necessary.
  13. Finally, fold in the chopped coriander and pimenta de cheiro.
  14. Serve the Vatapá hot, accompanied by white rice.
