Where to find ingredients
Find fresh bananas, free-range eggs, and pantry staples in any local supermarket produce and baking aisles. Plain flour (all-purpose) works perfectly here; ensure your bananas are very ripe for the best flavour.
Preparation method
- Add the eggs, boiling water, oil, and one sliced banana into the blender jug.
- Blend until completely smooth.
- Pour the mixture into a large mixing bowl.
- Add the flour and sugar to the bowl, whisking until just combined.
- Gently fold in the baking powder.
- Grease a round cake tin with butter and lightly dust with flour.
- Pour the batter into the prepared tin.
- Slice the remaining three bananas lengthways and arrange them neatly over the top of the batter.
- Sprinkle the surface generously with a mixture of caster sugar and cinnamon.
- Bake in a preheated oven at 200°C until golden and firm. Ensure a skewer inserted into the centre comes out clean.
