Ingredients
3 large eggs
1 tin (397g) condensed milk
397ml whole milk (using the empty condensed milk tin as a measure)
3 tbsp caster sugar (for the caramel)
1 tin (397g) condensed milk
397ml whole milk (using the empty condensed milk tin as a measure)
3 tbsp caster sugar (for the caramel)
Where to find ingredients
You can find condensed milk and whole milk in the baking or long-life milk aisles of any major supermarket. Use a standard 397g tin of condensed milk; if you prefer a thicker texture, you may substitute the whole milk with semi-skimmed milk, though full-fat is recommended for the authentic result.
Preparation method
- Preheat your oven to 180°C (160°C fan) for 10 minutes.
- In a blender, blitz the eggs, condensed milk, and whole milk for approximately 3 minutes until the mixture is perfectly smooth.
- Prepare the caramel directly in a ring mould or pudding tin by heating the sugar over a low heat, stirring occasionally until it melts into a golden amber liquid.
- Carefully coat the bottom and sides of the mould with the caramel, ensuring it is evenly distributed.
- Pour the blended mixture into the caramel-lined mould.
- Place in the preheated oven and bake for about 40 minutes, or until the pudding is set and lightly golden on top.
- Remove from the oven and allow it to cool completely before transferring it to the fridge.
- Chill for at least 4 hours, or ideally overnight, to ensure the pudding is firm and thoroughly set.
- To serve, gently run a palette knife around the edges and invert the mould onto a serving plate.
