Where to find ingredients
You can find condensed milk, eggs, and instant coffee in the baking or long-life dairy aisles of any major UK supermarket. Castor or granulated sugar is available in the baking aisle. For an optional substitute for coffee liqueur, a high-quality dark rum works well, both easily found in the spirits section.
Preparation method
- Prepare the caramel by melting sugar directly in a pudding tin over low heat, ensuring the sides are evenly coated.
- Place the eggs, condensed milk, milk, instant coffee, and the optional liqueur into a blender.
- Blend all the ingredients until the mixture is completely smooth and well-combined.
- Pour the custard mixture carefully into the prepared caramel-lined tin.
- Cover the tin tightly with a sheet of aluminium foil.
- Place the tin in a bain-marie and bake in a preheated oven at 180°C for approximately 1 hour, or until the pudding feels set.
- Remove from the oven and allow it to cool completely before placing it in the fridge.
- Once thoroughly chilled, carefully invert the pudding onto a serving plate.
- Serve chilled.
