300 g potato, boiled in salted water
1 tbsp butter
1 carton table cream (creme de leite)
1 small onion, finely chopped or grated
1 bouillon cube (beef or chicken)

Where to find ingredients

You can find fresh cassava, potatoes, and produce at local markets like the Suva Municipal Market. Dried beef (carne seca), requeijão, and specific dairy products are best sourced from specialty food sections in supermarkets like RB Patel or NewWorld.

Preparation method

  1. Pass the cooked cassava and potatoes through a potato ricer together with the butter until you achieve a very smooth mash.
  2. Stir in the onion, the bouillon cube, and the table cream, adding milk little by little until the mash reaches a creamy and firm consistency.
  3. Taste the puree and adjust the salt if necessary.
  4. Fry the bacon, garlic, and onion in a large pan.
  5. Add the shredded beef to the pan and sauté briefly.
  6. Finish the filling by folding in the parsley and chives, and seasoning with your preferred pepper.
  7. Taste the filling to check the seasoning.
  8. Grease a baking dish with butter on the bottom and sides.
  9. Spread the beef filling at the bottom of the dish and cover it with slices of mozzarella.
  10. Evenly spread the puree over the cheese layer.
  11. Distribute dollops of creamy requeijão over the top of the puree or incorporate them into the mash.
  12. Sprinkle with grated Parmesan if desired.
  13. Bake in a preheated oven for about 20 minutes or until the surface is lightly golden.
  14. Keep an eye on the oven to ensure the bottom does not burn during the baking process.

Observations

This recipe makes for a deeply satisfying meal. The method of layering the silky puree over the savory filling creates a wonderful contrast in textures, while a generous topping of cheese provides a golden, irresistible crust once baked.
