Where to find ingredients
Fresh produce and meats can be sourced from local municipal markets (such as Suva Municipal Market), supermarkets in urban centers, or village farm stalls. If lean round is unavailable, any lean ground beef works as an ideal base.
Preparation method
- Take the beef out of the fridge shortly before starting to let it reach room temperature.
- Bring the water to a simmer over low heat.
- Wash the green beans thoroughly.
- Trim the ends and cut the beans into 1.5 cm pieces on a diagonal bias.
- Dice the onion into 1 cm cubes.
- Peel and finely mince the garlic.
- Heat a large pan or skillet over medium heat.
- Add 1 tablespoon of olive oil and spread the meat in small portions across the pan.
- Let the meat brown undisturbed for 1 minute.
- Season with salt and pepper, then sprinkle the flour over the meat.
- Cook for 5 minutes, stirring occasionally so the meat breaks up and browns evenly.
- Transfer the browned meat to a bowl and set aside.
- Keep the pan over the heat and add the remaining tablespoon of olive oil along with the onion.
- Add a pinch of salt and sauté the onion for 2 minutes until softened.
- Add the green beans to the pan.
- Season with salt and pepper and sauté for 2 minutes until lightly browned, keeping them crisp-tender.
- Stir in the garlic, paprika, and cumin.
- Sauté for another minute until the spices are aromatic.
- Pour in the hot water gradually while scraping the bottom of the pan with a spatula to deglaze.
- Return the browned ground beef to the pan.
- Cook for another 2 minutes until the sauce thickens slightly.
- Serve immediately.
Observations
This dish is an excellent choice for everyday meals, balancing protein-rich ground beef with the fresh crunch of green beans. Follow these steps to ensure the meat develops a perfect sear before adding the vegetables, creating a flavorful and well-textured meal.
