Ingredients
6 passion fruits
2 tablespoons sugar
4 tablespoons water
2 tablespoons sugar
4 tablespoons water
Where to find ingredients
Passion fruit is widely available in Botswana, commonly found at local fruit and vegetable markets or large supermarket chains like Choppies or Spar in the fresh produce aisle. Look for fruit that feels slightly heavy for its size with wrinkled skin, which indicates peak ripeness. If fresh passion fruit is out of season, you may find imported frozen pulp in the freezer section of larger retailers, though fresh is highly recommended for the best flavour.
Preparation method
- Halve the passion fruits
- Scoop out all the pulp and seeds into a saucepan
- Add the sugar and water to the pan with the fruit pulp
- Heat over the stove until the sugar has dissolved completely
- Wait for the mixture to start bubbling if you prefer a thicker consistency
- Turn down the heat to low
- Continue to simmer and stir occasionally until the sauce reaches your preferred thickness
Observations
This simple purée is perfect for adding a zesty, refreshing kick to your desserts or favourite puddings. The process is straightforward, focusing on simmering the fruit pulp until it reaches the perfect consistency.
