Green Coconut Cocada (Cocada de coco verde)
A creamy Brazilian coconut sweet made with fresh green coconut, coconut water and a hint of clove, cooked until rich and spoon-soft.

Ingredients
1 kilogram white granulated sugar
2 tea cups coconut water
Grated coconut from 2 green coconuts
Cloves to taste

Where to find ingredients
In Botswana, look for white granulated sugar in the baking aisle of supermarkets and general dealers. Green coconuts and fresh coconut water are most often found at larger supermarkets, fruit and vegetable shops or produce markets; use the fresh grated coconut as the ideal ingredient. Whole cloves are usually stocked with spices and baking ingredients.
Preparation method
- Add the coconut water, white granulated sugar and cloves to a heavy-based pot
- Stir the ingredients gently
- Place over the heat and wait for the syrup to begin boiling
- Stir the grated coconut into the pot
- Continue cooking over high heat for about 20 minutes
- Stir the contents of the pot now and then so they do not stick
- Switch off the heat as soon as the mixture reaches a creamy consistency
Observations
This Brazilian sweet keeps the flavour of young coconut at the centre, using coconut water to build a fragrant syrup before the grated coconut is stirred in. A heavy-based pot and steady high heat help the mixture thicken into a creamy cocada without catching at the bottom.
