4 eggs
3 egg yolks
480 g sugar
30 g butter
120 ml warm water
4 eggs
3 egg yolks
480 g sugar

Where to find ingredients
All ingredients can be found in the baking and dairy sections of local supermarkets in Botswana. You can find high-quality shredded coconut and fresh local eggs easily.
Preparation method
- Mix the grated coconut with the warm water in a small bowl.
- Let the coconut rest for about 5 minutes until it is well hydrated.
- Place the hydrated coconut, eggs, egg yolks, sugar, and butter in a blender and pulse just enough to mix.
- Grease a 1.5-liter microwave-safe dish with butter and sprinkle with sugar, then pour in the mixture.
- Cook in the microwave at medium power for 9 to 12 minutes until the quindão starts to set.
- Remove from the microwave, let it warm down, and carefully unmold onto a serving plate.
- Wait for it to cool completely before serving to ensure the ideal texture.
Observations
The quindão is a larger and very popular variation of the traditional quindim. This simplified version uses the microwave to ensure speed without losing the characteristic flavor of coconut and eggs. Tip: use a container suitable for the microwave to ensure even cooking.
