Classic Mince-Filled Savoury Pancakes (Panqueca de carne moída)

Ingredients

1 1/2 cups plain flour
1 cup milk
2 large eggs
4 tablespoons vegetable oil
Sea salt to taste
300g beef mince
2 tablespoons onion, finely chopped or grated
1/2 tomato, diced
1/2 tin tomato paste
1 carton (approx. 200ml) thickened cream
Sea salt to taste
400g mozzarella cheese, sliced
Grated Parmesan or tasty cheese to taste

Where to find ingredients

You can find all ingredients at local supermarkets such as Coles or Woolworths. Beef mince is available in the meat aisle, and dairy items like thickened cream and mozzarella are in the chilled fridge section.

Preparation method

  1. Add the eggs, milk, and oil to a blender.
  2. Gradually add the flour and blitz until you have a smooth, thin batter.
  3. Season with a pinch of sea salt.
  4. Heat a non-stick frying pan over medium heat and lightly grease it with a little oil.
  5. Pour a ladleful of the batter into the hot pan.
  6. Tilt the pan to coat the bottom evenly in a thin, uniform layer.
  7. Cook until the edges lift away from the pan, then flip to lightly brown the other side.
  8. Remove the pancakes and set them aside.
  9. In a separate saucepan, sauté the onion in a splash of oil until translucent.
  10. Add the beef mince and cook, breaking up any lumps, until all liquid has evaporated.
  11. Reduce the heat, cover, and cook for a few minutes to tenderise.
  12. Stir in the diced tomato and cover the pan again.
  13. Simmer for another 3 minutes until softened.
  14. Mix in the tomato paste and season to your liking.
  15. Cook for a further 10 minutes, or until the sauce has reduced and thickened.
  16. Remove from the heat and allow the mince mixture to cool slightly.
  17. Stir the thickened cream into the beef mixture until well combined and smooth.
  18. Return the pan to low heat and simmer gently for 5 minutes.
  19. Place a slice of mozzarella and a portion of the beef sauce onto each pancake.
  20. Roll up each pancake carefully.
  21. Grease a baking dish with a little of the extra sauce or butter.
  22. Arrange the rolled pancakes side-by-side in the prepared dish.
  23. Spread any remaining sauce over the top of the pancakes.
  24. Sprinkle generously with grated cheese.
  25. Bake in a preheated moderate oven (180°C) for about 20 minutes, or until the cheese has melted and turned golden brown.
