Ingredients
1 1/2 cups cooked beans (leftovers)
2 large onions, finely chopped
1 steak, diced into small cubes
1 clove garlic, minced
1/2 capsicum, diced
1/4 cabbage, roughly chopped
1 egg
Bacon to taste, chopped
1 tsp dried oregano
1 tsp ground black pepper
Salt to taste
3 tbsp vinegar
4 drops liquid sweetener
Water, as needed for cooking
2 large onions, finely chopped
1 steak, diced into small cubes
1 clove garlic, minced
1/2 capsicum, diced
1/4 cabbage, roughly chopped
1 egg
Bacon to taste, chopped
1 tsp dried oregano
1 tsp ground black pepper
Salt to taste
3 tbsp vinegar
4 drops liquid sweetener
Water, as needed for cooking
Where to find ingredients
For the beans, use any leftover black or red kidney beans from your previous cooking. Capsicum is widely available at all local supermarkets (Coles, Woolworths, ALDI). For the steak, a simple budget-friendly rump or scotch fillet from your local butcher or supermarket deli works perfectly. Sweetener can be found in the baking or health food aisle of any grocer; if you prefer, you can omit it or use a tiny pinch of sugar. The rest of the fresh produce and bacon are standard items found in any Aussie kitchen staple list.
Preparation method
- In a pan, fry the diced steak with the garlic, onion, and bacon until nicely browned
- Toss in the diced capsicum and sauté for another minute
- Add the cooked beans, chopped cabbage, a splash of water (just enough to slightly cover), salt, pepper, oregano, vinegar, and the sweetener
- Simmer over medium heat until the cabbage has softened up
- While the salad is still bubbling away, crack the egg directly into the pan
- Stir vigorously with a fork or whisk until the egg is cooked through and the broth thickens slightly
- Have a taste and adjust the seasoning if it needs a bit more salt or pepper
- Serve hot and enjoy
