Where to find ingredients
You can find fresh prawns and herbs at local fishmongers or the seafood section of major Australian supermarkets. Annatto powder (colorau) and Requeijão cremoso may be sourced from specialist Latin American grocers. As a substitute for Requeijão, a high-quality cream cheese mixed with a little heavy cream can be used, though it will change the authentic flavour profile.
Preparation method
- Thoroughly wash the prawns and marinate them in the lemon juice and salt for approximately 20 minutes.
- Rinse the prawns once more and drain completely.
- In a large heavy-based pot, sauté the crushed garlic in the olive oil until golden.
- Add the chopped onions, annatto powder, and diced tomatoes to the pot.
- Cook until the onions have softened and become translucent.
- Stir in the tomato sauce, beef-style seasoning, and chopped basil.
- Add the butter and the prawns into the pot.
- Simmer over low heat for approximately 30 minutes, stirring occasionally.
- Fold in the Requeijão cremoso and cook for about 10 minutes, stirring until the sauce thickens.
- If necessary, dissolve the cornflour in a little bit of the liquid from the pot and stir it back into the mixture, cooking for another 3 minutes.
- Add the chopped coriander and spring onions.
- Remove from the heat and gently stir in the table cream.
- Mix delicately until the sauce is smooth and homogeneous.
