Ingredients
1 kg granulated sugar
2 teacups coconut water
Grated coconut from 2 green coconuts
Cloves to taste
2 teacups coconut water
Grated coconut from 2 green coconuts
Cloves to taste
Where to find ingredients
Look for fresh green coconuts at produce markets, supermarket fruit sections or informal fresh-produce stalls. Granulated sugar and cloves are usually in the baking and spice aisles.
Preparation method
- Add the coconut water, granulated sugar and cloves to a heavy-based pot
- Stir the ingredients gently
- Place over the heat and wait for the syrup to begin boiling
- Stir the grated coconut into the pot
- Keep cooking over high heat for about 20 minutes
- Stir the contents of the pot now and then so they do not stick
- Turn off the heat once the mixture has a creamy consistency
Observations
This recipe gives you an authentic cocada with a creamy texture and a fragrant coconut aroma. The key is steady cooking, so the syrup and coconut come together properly without catching at the bottom of the pot.
