400 g maize starch biscuits
3 egg yolks
3 egg whites
1 pinch of salt
400 g cream, without whey
250 g unsalted butter, at room temperature
400 g caster sugar
400 g maize starch biscuits
3 egg yolks
3 egg whites
1 pinch of salt
400 g cream, without whey
250 g unsalted butter, at room temperature
Where to find ingredients
Look for roasted peanuts, sugar, Maize Meal biscuits or plain digestive biscuits, eggs, cream, and unsalted butter at local supermarkets, grocery shops, and bakery aisle sections. If needed, use plain biscuits as a substitute for the biscuit layer.
Preparation method
- Crush the maize starch biscuits until you have a fine crumb and set aside
- In a large bowl, beat the room-temperature butter with the caster sugar until light and fluffy
- Add the egg yolks, one at a time, beating well after each addition to incorporate them
- Mix the roasted and ground peanuts and the pinch of salt into the cream until all the ingredients are well combined
- In another clean bowl, whisk the egg whites until stiff peaks form
- Gently fold the meringue (whipped egg whites) into the peanut mixture
- Alternate adding the cream to the mixture, folding gently with a spatula to keep it light and airy
- Line the bottom of a baking dish or serving dish with the crushed biscuits, forming an even layer
- Spoon a generous layer of peanut cream over the biscuit base
- Repeat the process, alternating layers of peanut cream and biscuit base, until all the ingredients are used, finishing with a layer of cream
- If you like, decorate the top of the pie with whole roasted peanuts or chopped peanuts
- Chill the pie in the refrigerator for at least 4 hours, or until completely set and well chilled
- Serve the pie cold
