Where to find ingredients
Most ingredients for this recipe, such as flour, sugar, eggs, and butter, are standard pantry staples found at any local supermarket like Pick n Pay or OK Foods. For the coconut milk and shredded coconut, check the baking or international aisles of your local grocery shop. If you cannot find good quality coconut milk, look in the specialty or health food sections, as these are increasingly available in urban centres throughout Zimbabwe.
Preparation method
- Prepare the topping: In a bowl, combine 1 and 1/2 cups of sugar with the desiccated coconut
- Prepare the batter: Separate the yolks from the whites of the 5 eggs
- Whisk the egg whites until stiff peaks form and set aside
- In another large bowl, cream together the butter with 2 and 1/2 cups of sugar and the egg yolks until light and fluffy
- Gradually add the flour and milk to the butter and yolk mixture, alternating and starting and finishing with the flour. Mix thoroughly after each addition
- Gently fold the stiff egg whites into the batter, using a folding motion to maintain the air
- Add the baking powder and mix gently
- In a saucepan, heat the coconut milk and water. Add this mixture to the cake batter and stir until you have a smooth consistency
- Pour the batter into a greased and floured cake tin
- Spread the coconut and sugar topping evenly over the batter
- Bake in an oven preheated to 180°C for approximately 30-40 minutes, or until the cake is golden brown and firm to the touch. Use a skewer to check that it is cooked through
