Ingredients
4 eggs
1 pot of plain yoghurt
1/2 cup of vegetable oil
2 cups of granulated sugar
2 cups of all-purpose flour
1 tablespoon of baking powder
1 pot of plain yoghurt
1/2 cup of vegetable oil

2 cups of all-purpose flour
1 tablespoon of baking powder
Where to find ingredients
You can find plain yoghurt and fresh eggs in the dairy and poultry aisles of any local supermarket. All-purpose flour and other pantry staples are readily available in the baking section. If you cannot find plain yoghurt, a thick Greek-style yoghurt is an excellent substitute.
Preparation method
- Place the eggs, yoghurt, and oil into your blender jug.
- Blend these liquid ingredients together for 4 minutes.
- Add the sugar and flour to the mixture.
- Pulse and blend everything again for 2 to 3 minutes.
- Finish by adding the baking powder.
- Blend the batter briefly for just 30 seconds to combine.
- Transfer the batter into a previously greased cake tin.
- Place into a preheated oven set to medium temperature.
- Bake for about 40 minutes or until the cake is golden brown.
Observations
This cake is a fantastic choice to pair with an afternoon cup of tea or coffee. Thanks to its straightforward profile, it acts as a neutral canvas that can be easily elevated with a splash of vanilla extract or some freshly grated lemon zest if you fancy.
