Creamy Beef Croquettes (Croquete cremoso de carne)

Ingredients

400 g ground beef (fat-free)
4 large potatoes
1/2 onion, grated
1 cup chopped spring onion and parsley
4 level tbsp creamy requeijão
Salt to taste
Black pepper to taste
Plain flour for shaping
1 egg white
Breadcrumbs for coating
Oil for frying

Preparation method

  1. Cook the beef in salted water until fully cooked
  2. Cook the potatoes in salted water until tender
  3. Mash the cooked potatoes with a potato masher to form a purée
  4. Grate the onion and chop the spring onion and parsley
  5. In a bowl, mix the cooked shredded beef with the mashed potatoes, grated onion, chopped spring onion and parsley, creamy requeijão, salt and black pepper
  6. Knead well until all the ingredients form a smooth dough
  7. Lightly wet your hands with plain flour and shape the croquettes as desired
  8. If needed, add more plain flour to the mixture to make shaping easier
  9. Dip each croquette in beaten egg white
  10. Then coat the croquettes in breadcrumbs, covering them completely
  11. Heat plenty of oil in a pan
  12. Fry the croquettes in hot oil until golden
  13. Remove the fried croquettes and place them on paper towels to drain off the excess oil
  14. Serve the croquettes hot
