Pressure Cooker Zucchini Relish

Ingredients

3 courgettes (approx. 800 g)
3 garlic cloves
2 teaspoons salt
1 teaspoon wholegrain mustard
1/4 cup olive oil

Where to find ingredients

Courgettes (often labelled as baby marrow in South Africa) and garlic are readily available at any local supermarket like Woolworths, Pick n Pay, or Checkers. For wholegrain mustard and high-quality olive oil, check the condiment aisle of your local grocery store or visit a neighbourhood deli or food market for artisanal options.

Preparation method

  1. Wash the courgettes thoroughly
  2. Dry them off and trim the ends
  3. Grate the courgettes using the coarse side of a grater
  4. Place the grated veg into a sieve or a colander
  5. Sprinkle in the salt and give it a good toss
  6. Set the sieve over a bowl and let the liquid drain for 20 minutes
  7. Peel the garlic and mince it finely
  8. Press the courgettes with your hands to squeeze out any remaining moisture
  9. Transfer the drained courgettes into your pressure cooker
  10. Toss in the minced garlic
  11. Add the olive oil and mustard
  12. Mix everything together well
  13. Spread the mixture evenly across the base of the pot for consistent cooking
  14. Seal the pressure cooker and lock the valve
  15. Cook on medium heat for 10 minutes once the pot reaches pressure
  16. Remove from the heat and allow the pressure to release naturally
  17. Open the lid and transfer the relish into a serving bowl
  18. Allow it to cool down to room temperature
  19. Pop it in the fridge to chill before serving

Observations

This recipe is a proper time-saver for whipping up a succulent, flavour-packed relish. The trick is to draw out the excess moisture from the courgettes before cooking, which ensures you get that spot-on texture every time.
