Traditional light arroz doce (Arroz doce diet)

Ingredients

Casca de laranja para decorar
2 cups de água
1 cup de rice de grão curto ou médio
3 cups de milk desnatado
Canela em pau to taste
32 colheres dosadoras de adoçante em pó
Canela em pó para polvilhar
1 colher de sobremesa de margarina vegetal
1 tablespoon de cornflour (maisena)

Where to find ingredients

Look for the ingredients in well-stocked supermarkets, fresh produce markets, butchers, fishmongers, baking suppliers and shops that carry Brazilian or Latin American foods. Cultural ingredients such as palmito, requeijao, catupiry, cassava flour, goiabada, cachaca, pacoca, charque, feijoada and moranga are best used as originally named; substitutes should only be used when necessary and treated as substitutes.

Preparation method

  1. In a pan, derreta a margarina vegetal e saute o rice até ficar levemente translúcido
  2. Add a água e cook até o rice ficar macio, mexendo ocasionalmente
  3. Quando o rice estiver cooked, coloque a canela em pau na panela e mix o milk desnatado com o cornflour dissolvido
  4. Place over the heat médio e mexa até a mistura engrossar e ferver
  5. Remove from the heat, add o adoçante em pó e mix bem
  6. Let o rice doce esfriar um pouco antes de servir
  7. Distribua em taças, polvilhe com canela em pó e decore com casca de laranja

Observations

Traditional light arroz doce is lighter creamy rice pudding, prepared in a way that keeps the dish's original identity, ingredients and technique intact. The quantities, cooking times and temperatures follow the source recipe so the flavour and texture stay faithful.

The method is organised step by step: prepare the ingredients, make the dough, filling, sauce, cream or main component as required, then finish the dish for serving. It is written for a home kitchen while respecting the Brazilian culinary context where the recipe calls for it.
