Parmigiana-Style Baked Rice

Ingredients

2 cups white rice
4 cups water
2 chicken bouillon cubes
3 skinless tomatoes
1 tablespoon tomato paste
2 eggs
3 tablespoons grated cheese
100g ham, diced
100g mozzarella, diced

Where to find ingredients

Find standard pantry staples like white rice, eggs, and tomato paste at any local grocery store. For the ham, visit the deli counter (often called the 'deli' or 'charcuterie' section) and ask for a thick-cut slice to dice yourself. The grated cheese is typically found in the dairy aisle; choose a hard, salty variety like a mature cheddar or a hard grating cheese. For the chicken bouillon cubes, check the soup and stock aisle, often branded as 'stock cubes'. Mozzarella for melting is easily picked up in the dairy section.

Preparation method

  1. Dissolve one of the bouillon cubes in a small amount of hot water
  2. Place the skinless tomatoes, tomato paste, and the dissolved bouillon in a blender
  3. Blitz everything until you have a smooth, uniform sauce
  4. Cook the rice in a pot with the 4 cups of water and the remaining bouillon cube for 15 minutes
  5. Lightly beat the eggs in a mixing bowl
  6. Stir the grated cheese, diced ham, and mozzarella into the bowl with the beaten eggs
  7. Fold this mixture into the hot, freshly cooked rice
  8. Spread a layer of the blended tomato sauce across the bottom of a baking dish
  9. Evenly distribute the rice mixture over the sauce
  10. Top the dish with the remaining tomato sauce
  11. Bake in a preheated oven at 180°C for 10 to 15 minutes until nicely golden and bubbly

Observations

This recipe is a brilliant way to elevate leftover rice into a special stand-alone meal. The result is a creamy, golden-brown gratin that's perfect for a relaxed family lunch or a fuss-free dinner.
