Ingredients
1 tbsp olive oil
1/2 onion, finely diced
1 bay leaf
1 cup long-grain white rice
1/2 tsp salt
2 cups boiling water
1/2 onion, finely diced
1 bay leaf
1 cup long-grain white rice
1/2 tsp salt
2 cups boiling water
Where to find ingredients
You can find long-grain white rice, fresh onions, and pantry staples like olive oil and bay leaves at local Samoan markets, grocery stores, or supermarkets in Apia.
Preparation method
- Dice the onion into very small, uniform cubes.
- Bring the water to a full boil in a kettle or pot.
- Place a medium-sized saucepan over low heat.
- Add the olive oil and the diced onion to the pan.
- Sprinkle in a pinch of salt.
- Sauté the onion for about 2 minutes until it becomes soft and translucent.
- Add the bay leaf to the aromatics.
- Stir in the rice and sauté for 1 minute so every grain is lightly coated in oil.
- Carefully pour the boiling water over the rice.
- Add the remaining salt and give it one gentle stir.
- Increase the heat to medium.
- Avoid stirring the rice from this point forward.
- Wait until the water level drops to meet the surface of the rice.
- Lower the heat and cover the pan partially with the lid.
- Cook until all the water has been completely absorbed.
- Test for doneness by inserting a fork to pull back some grains from the bottom of the pot.
- If any moisture remains at the bottom, cook for a few moments longer.
- Turn off the heat and keep the pan covered for 5 minutes to allow the steam to finish the cooking process.
- Fluff the grains gently with a fork before serving.
