Traditional Easy Roast Beef Ribs (Costela assada)

Ingredients

2 whole racks of beef ribs
6 cloves garlic, crushed
Juice of 1/2 lemon
Salt to taste
Beef stock (optional)

Look for beef ribs at the butcher counter or meat section, and buy garlic, lemons, salt, and beef stock at any supermarket or fresh market. If needed, use a mild beef broth as a substitute for beef stock.

Preparation method

  1. Season the rib racks with the crushed garlic, lemon juice and salt
  2. Place the seasoned meat in a roasting tray
  3. Cover the tray tightly with aluminium foil
  4. Bake in a preheated medium oven (about 180°C) for 3 hours
  5. Remove the aluminium foil
  6. Keep roasting for longer, turning the meat occasionally and basting with the beef stock (if using) or with the pan juices, until nicely browned
  7. If the juices in the tray dry out, add a little boiling water to prevent sticking and to create more sauce
