Preparation method
- Trim the ends and sides of the pork loin
- Cut the meat into three equal strips lengthwise
- Season the strips and interlace them to form a braid
- Wrap the braid with bacon slices and use toothpicks to secure them
- Baste the loin with pineapple juice and let it marinate for one hour
- Cover the meat with aluminum foil
- Place in the oven and remove the aluminum foil after cooking begins
- Roast for a maximum of 1 hour
- Garnish the dish with pineapple cubes and lettuce leaves before serving
