Where to find ingredients
Look for the prawns at the seafood counter, and pick up the herbs, tomatoes, onions, garlic, dairy, and pantry items in the fresh produce, grocery, and chilled dairy sections of any supermarket or local market. If needed, a mild cooking stock can be used as a substitute for part of the cooking liquid, but keep the original ingredients as listed for the best result.
Preparation method
- Wash the prawns well and marinate in the lemon juice and salt for about 20 minutes
- Rinse the prawns again and drain thoroughly
- In a large pan, brown the crushed garlic in the olive oil
- Add the chopped onion, annatto powder, and chopped tomato
- Cook until the onion softens
- Stir in the tomato sauce, meat seasoning powder, and chopped basil
- Add the butter and prawns to the pan
- Cook over low heat for about 30 minutes, stirring occasionally
- Add the requeijão cremoso and cook for about 10 minutes, stirring until the cream thickens
- If needed, dissolve the cornflour in a little of the stock removed from the pan and add it to the mixture, cooking for another 3 minutes
- Add the chopped coriander and spring onion
- Turn off the heat and stir in the table cream
- Gently mix until you get a smooth cream
