Preparation method
- Cut the French bread rolls into slices and place them in a large bowl
- Pour the coconut milk over the bread and let it soften completely
- Transfer the bread and coconut milk mixture to a blender and blend until smooth

- Add the chopped onion and sauté until translucent
- Add the chopped garlic and sauté for another minute, without letting it brown
- Add the small shrimp to the sauté and cook for just a few minutes, until they change colour
- Add the shredded chicken to the pan and mix well with the sauté
- Pour the blended bread and coconut milk cream into the pan
- Add the hot vegetable stock and stir continuously with a whisk or spoon to prevent the bread from sticking to the bottom and to ensure a smooth texture
- Cook over low heat, stirring constantly, until the vatapá thickens and reaches the desired consistency
- Season with salt to taste, adjusting as needed
- Finally, stir in the chopped coriander and chopped sweet pepper
- Serve the vatapá hot, accompanied by white rice
