Traditional carne seca escondidinho (Escondidinho de carne seca)

Ingredients

1 kg cassava (cooked)
1 litre whole milk
1/2 kg creamy requeijão
2 kg carne seca (cooked and shredded)
200 g chopped onion
200 g regular butter
Grated Parmesan cheese for baking

Where to find ingredients

Find the ingredients at a local supermarket: cassava in the fresh produce or root vegetables section, milk and butter in the dairy aisle, salted dried beef at the butcher or meat counter, onions in the produce section, and grated Parmesan in the cheese aisle. If needed, ask for salted beef as a substitute for carne seca.

Preparation method

  1. Prepare the cassava mash: in a blender, blend the cooked cassava with the whole milk and creamy requeijão until you get a smooth, creamy mixture
  2. Prepare the filling: in a pan, melt the butter and sauté the chopped onion until translucent
  3. Add the cooked, shredded dried beef to the pan with the onion and sauté for a few minutes to bring the flavours together
  4. Assemble the escondidinho: in a baking dish, spread a layer of cassava mash
  5. Cover the mash with all of the dried beef filling, spreading it evenly
  6. Finish with another generous layer of cassava mash over the filling
  7. Sprinkle grated Parmesan cheese over the last layer of mash to gratinate
  8. Bake in a preheated oven at 180°C for about 10 minutes, or until the cheese is golden and forms a gratinated crust
  9. Serve the escondidinho hot and garnish to taste

Observations

Escondidinho de carne seca is a classic Brazilian dish, loved for the way it brings together contrasting textures and flavours. It is ideal for a family lunch or a special dinner, combining a smooth cassava mash with a savoury filling of sautéed shredded dried beef. Its layered assembly and golden gratinated finish make it look appetising and feel wonderfully comforting.

The ease of preparation, together with the refined result, makes this escondidinho a popular choice for anyone looking for a hearty meal with homely flavour.
