Homemade potato gnocchi (Nhoque de batata)

Ingredients

6 medium potatoes
1 cup wheat flour
Salt to taste
500g ground beef
1/2 onion, finely chopped
1 tablespoon olive oil
2 beef bouillon cubes
1 can tomato sauce
Grated cheese to taste

Where to find ingredients

Fresh produce and staples like flour, oil, and canned sauce are available in local supermarkets or open-air markets. For grated cheese, use local hard cheeses as a substitute for traditional Brazilian types.

Preparation method

  1. Boil the potatoes in water until they are soft.
  2. Peel the potatoes and pass them through a potato ricer while they are still hot.
  3. Gradually add the wheat flour and salt, kneading well until a smooth, homogeneous dough is formed.
  4. Place the dough on a floured surface and roll it into ropes.
  5. Cut each rope into approximately 2 cm pieces.
  6. In a large pot, bring plenty of salted water to a boil.
  7. Once boiling, add the gnocchi in batches, waiting for them to rise to the surface.
  8. Prepare a bowl with cold water and a colander. Remove the cooked gnocchi with a slotted spoon and place them in the colander for a thermal shock.
  9. Repeat the process until all the dough is cooked.
  10. Drain the gnocchi well and set aside in a baking dish.
  11. Finely chop the onion and sauté it in a pan with olive oil.
  12. Add the ground beef and the beef bouillon cubes to the sautéed onion.
  13. Stir well and, once the meat is cooked, add the tomato sauce.
  14. Let the sauce simmer for 4 minutes.
  15. Pour the meat sauce over the reserved gnocchi.
  16. Sprinkle grated cheese on top.
  17. Place in the oven to gratinate.
  18. Serve hot.
